How eat pickled eggplant of Japanese style ?

Pickled eggplant of Japanese style can enjoy the flavor of soy sauce and the spiciness of ginger in this recipe.

<Ingredient>

Eggplant :1 eggplant


<Seasonings>

Sugar: 1 Tbsp
vinegar: 2 Tbsp
Soy sauce:2 Tbsp
Grated ginger: 2 Tsp (as you like)
<How to cook>

1:Cut the hefty part of the eggplant.

2:Cut lengthwise with a knife and divide into two.
*For large eggplants, cut into quarters.

3:Soak the eggplant in salt water for about 10 minutes (to prevent discoloration).

4:Wipe the eggplant lightly.

5:Put the eggplant into a clean storage container.

6:Mix all the seasonings into container.

7:It is better if the mouth of the container is closed and air is removed.

8:After marinating for half a day, they are ready to eat.
The longer it marinates, the saltier it will be.
