Today’s I will introduce different “Miso”.

How many do you know miso variations.

Miso has a lot of kind in Japan.

There selling in supermarket, handmade,limited area etc.

However Miso is roughly divided into two types.
One is red miso, It is a brownish color and has a dry taste and the other is white miso that is a white color and taste is sweeter.

What is “Hatcho miso” ?

My photo dish is use a”Hatcho miso”.

In Nagoya, when it comes to miso, there is the red miso using Hatcho Miso.

From its appearance, it is easy to imagine that it is salty, but it is low in salt and not very sweet.

It can be used as a source because taste is rich!

I used Hatcho Miso when it roasted vegetables sauce.

It come up sweet taste of vegetables.

What is “White miso” ?

In Japan, White miso is called “Shiro miso”.

White miso is characterized by its sweet, mild flavor.

It goes well with fish and chicken, and is used in a dish called “Saikyo-yaki”.

It is eaten in areas Nagoya than south.

Miso is one of the essential soy foods for rice eating Japanese.
