What is “Kinpira gobou”?
Today's I will introduce “Kinpira gobou“ Have you ever heard “Kinpira gobou”? It is side dishes that burdock root and carrot are used. This combination is classic in Japanese home. “Gobou” means burdock in Japan. Seasoning is soy sauce based and sugar is added. When I make kinpira gobo, the essential seasonings are dashi (Japanese soup stock) and sesame oil. Dashi soup gives the dish a rich flavor, and sesame oil is very appetizing.

Ingredient
Burdock/ 1 piece
Carrot/ 1 piece
Sesame oil / 1Tbs
White sesame / 1Tbs
Takanotsume(Red hot ppeper)/ 1/2 Tsp
★Salt / 1 pinch
★Dashi stock (Not include salt) / 1 Tbsp
*If you use dry dashi powder instead of dashi soup / 1/2 tsp
★Sugar / 1 Tbsp
★Soy sauce / 1 and 1/2 Tbsp
★Mirin / 2 Tbsps
Recip
①Cut into thin-slice(about 1mm~2mm) Burdock and carrot. After that, After that, soak burdock into the water.
②Mixing ★ seasoning
③Spread the sesame oil and Takanotsume(Red hot ppeper)into a fly pan or pot. When hot, saute carrot and drained burdock.
④When it gets soft, add mixed ★ seasoning.
⑤Heat over medium heat. Until when the moisture is gone and the product begins to shine.
⑥Turn off the heat. Sprinkle the white sesame.
*Wait until the heat has cooled down to allow the flavors to blend and become delicious.
