In Japanese cooking, fish should be served with the left side of the head.

For fillets, the back of the fish (the broad side of the body) should be on the left.

Salmon is a delicious fatty fish, so it is best to serve it skin side up.

I did use fillets this dish.

But this fillet is hard to judge.

My conclusion is, as long as it looks good!

The reason has many kind of….I doing introduce major.

(1) From the traditional Japanese view that the left said higher in rank. *The traditional Japanese concept of seating order which the left side of the table is considered to be higher in principle.

(2) Based on (1) above, fish dishes with a fish head usually face left, and the concept of “fish facing left” has taken root.

Although there are various theories, it is common in Japan to serve fish with the head side of the fish to the left.

When eating a Japanese set meal at your home, try putting the fish head on the left!
