Good evening! Today's I will introduce “Miso Dengaku sauce with eggplant ” Do you know “Miso dengaku”? It’s miso glazed. It is made by adding seasonings such as sugar and mirin to miso and flavoring it with yuzu and other ingredients. In Japan dipped in eat with konjac, eggplant, Taro etc. The name "dengaku" is said to derive from "dengaku-mai," a custom of praying for a good harvest in farming villages during the Heian period. *Mai means "dance. In this "Dengaku-mai," dancers wear white hakama and jump on a single stick. This costume resembles the shape of a tofu skewer, hence the name "Dengaku-mai. The Originally, tofu was served with miso paste, but gradually variations have been added, such as using vegetables as ingredients or river fish. *There are various theories. Recipe & Ingredient
Ingredient /about 2 persons
Eggplant / 1 pice(I used globe eggplant)
Cheeses that can be melted (low-sodium is recommended) / as you like
Topping : green onion or white sesame / as you like
Seasoning
Oil / 2 Tbsps
Water / 10 cc
★Miso/ 3 Tbsps
★Sugar/ 3 Tbsps
★Mirin/ 1 Tbsps
★Dashi soup(Not include salt) / 1 Tbsp
★SAKE / 1 Tbsp
Recip
①Eggplant is cut lengthwise 2 pieces. Next, cut the body part into a grid. Soak the eggplant in water to prevent the color from changing.
②Spread oil in a frying pan and cook the eggplant, starting with the flesh. When browned, cook the skin part as well. (medium heat).
③Add water to flying pan and cover. Sweat to medium-high heat.
④Meanwhile, mix the ★ seasonings.
⑤When cooked through, take out the eggplant and place on aluminum foil or a baking dish with the flesh side up.
⑥Spread the seasoning mixture over the body. Put cheese on top of the eggplant. Bake in the oven until browned.
⑦Top with green onions or white sesame seeds.
