What is Japanese New Year’s Special Soup “Ozouni (お雑煮)”?

What is “Ozouni (お雑煮)” ?

Good evening!

I’m introducing “Ozouni (お雑煮)” !

Ozoni is a Special soup dish with Mochi (Rice cake) that Japanese people eat on New Year’s Day at 1th Jan.

It is smells of dashi when you wake up at 1th Jan.
Because My mother making a Ozouni in this morning. (And now, I doing cook it for my family)

I could feel become to New Year’s when I wake up with this memorial fragrance!

Each family has a different taste for ozoni!

It is different shape, Mochi is bake or simmer of Mochi, using ingridents  in prefecture or region.

Because each family has a different taste for ozoni!

For example made by seasoning soup stock with soy sauce or miso etc.
 Also the dashi soup is varies such as kelp,  bonito flakes, dried sardines etc.

My Ozouni using Ichiban dashi soup.
Based Bonito flakes and Kelp.

It can feel good bonito smells and feeling kelp.

And hidden taste is chicken!

First I did simmer for chicken with Ichiban dashi.
Because There can take a chicken dashi.

Include seasoning is Soy sauce, Mirin, Sake, salt and Yuzu peel.
Ingredient is Carrot, Japanese white radish, Maitake mushroom or Shiitake mushroom,Mitsuba, etc...

Yuzu peel is good job, more feel the flavor!

If you learn to take a Ichiban dashi, You can make it in your home!

Other fun eating styles

My favorit eat time is next day.
Because It is change rich taste for Ozouni.

And My family eating style with handmade Udon.

Very easy!

Just boil some handmade udon noodles and put them in some leftover warmed up Ozouni!
